WINE MAKING NOTES
“El amigo imaginario” (Imaginary friend) is a 100% Palomino that has been created as if it was a red wine. This wine ages in oloroso casks for 10 months, and continues to age in bottles for another 4 months . Wine is elaborated by following the prescriptions of the organic/biologic viniculture.
TASTING NOTES
It has an amber color along with golden reflections, it is clean and with a very dense tear. On the nose it has aromas that are reminiscent of tropical fruits with nutty and roasted backdrops for the aging in oloroso barrels. We also note a chalky aroma that perfectly reminds one of its origin, the typical “Albariza” vineyard soil. A strong hint of salinity that is not uncommon for a palomino crianza wine.

BLANCO

WINE MAKING NOTES
The “Forlong White” is a blend of indigenous grapes (Local and Minority) Palomino and Pedro Ximenez grapes that creates a unique and rare wine. Grapes are hand-harvested, de-stemmed, crushed and macerated in stainless steel tanks for 3 days. The fermentation is performed at low temperature; this will assure the preservation of the terroir. Finally the wine is bottled without any kind of treatment, so it conserves all the natural aromas possible. Wine is elaborated by following the prescriptions of the organic/biologic viniculture.
TASTING NOTES
Visually it has a lovely pale yellow with a flash of green, it’s really brilliant in the glass. It’s a medium bodied wine very intense and aromatic with very citric notes. Balsamic and Mediterranean notes such as tropical fruit cocktail, banana, peach, pineapples stand out. Chalky aroma and flavor because of the albariza Soil.

MON AMOUR

WINE MAKING NOTES
Made from 100% palomino. After the grape is destemmed and leaves removed the grapes are subjected to dry ice within a pneumatic press to avoid oxidation. The process takes around 90 minutes. The resulting must is transferred to temperature controlled tanks that maintains the wine at 3 Celsius for 24 hours. This process is called Desfangado or Debourbage, and it allows for the separation of the wine must from the solids which eventually fall to bottom of the tank. Finally the wine must is fermented and aged for 10 months in second hand French oak barrels from Bordeaux’s The wine is disturbed every 2-3 months by the process of stirring or Batonage to move the lees at the bottom of the barrel to maintain them in suspension to help the wine gain final complexity. Wine is elaborated by following the prescriptions of the organic/biologic viniculture.
TASTING NOTES
The slightly floral aromas are bound up with richer balsamic and caramelized notes while on the palate there a slight salty hint that gives a clue to its area of origin. It has a yellow color along with golden reflections, it is clean and with a very dense tear. On the nose it has floral notes of tropical flowers, caramelized bananas with hints of citrus. A strong hint of salinity that is not uncommon for a palomino wine.

TINTILLA
RED
WINE MAKING NOTES
This wine “Forlong Tintilla” is produced from an autochthonous grape that is native to the sherry region: Rota is a coastal town in Andalucía, famous for the wine with the same name and for its US naval base. This in fact is one of the reasons why so many vineyards had to disappear and why the wines are now so rare. Grapes are hand-harvested, de-stemmed, crushed and macerated and aged in terracotta tanks for 6 months. Afterwards it is transferred to French oak barrels for 10 months. Finally, the wine is bottled without any kind of treatment, so it conserves all the natural flavors. Wine is elaborated by following the prescriptions of the organic/biologic viniculture.
TASTING NOTES
Nice fresh entrance, intense Full bodied and very persistent wine. Very good acidity and sweet tannins. On the nose is very elegant and intense with fresh red fruits, cinnamon and black pepper. Chalk and mineral flavors because of the Albarizas.
