Cims de Porrera was born in 1996 out of the concern for the abandonment of the centenarian and native vines in Porrera (Carinena and Grenache), which grow in soils of slate at an altitude between 350 and 600 meters in steep descents of 40%-50% and have an average production of 300-500 g of grapes per vine. The tough work conditions, combined with the low rate of return for winegrowers, forced landowners to abandon their vineyards. The initiative aimed at recuperating these vines and making high quality wines was undertaken together with the members of the local cooperative, who Cims de Porrera buys the grapes from. The result of the hard work of the Pérez family and the winegrowers that have been working this land for generations is Cims de Porrera “CLÀSSIC”: a path of recognition and appreciation for what we understand as “Priorat’s pure expression”.

WINE MAKING NOTES
Harvest is done by hand using 12-kg boxes. The two varieties are destemmed separately and slightly crushed. Macerations are done every 15-20 days at a maximum controlled temperature of 28°C. Both varieties are vinified separately, during the vinification we make them closed pumping daily and some of the days we make the open pumping over.
Carignan is aged for 12 to 14 months in 400L barrels. and the Garnacha is aged 12 to 14 months in cement tanks. Later it is bottled and left to rest in the cellar for 3 more years before going on the market.
TASTING NOTES
Beautifully-intense aromas of red berry fruit, mineral notes, and a distinct spiciness. Display a pleasantly sweet black-fruited palate. Medium-bodied palate with good concentration, velvety-textured and lovely rounded tannin, good acidity, and freshness. Finishing long and dry.

WINE MAKING NOTES
Harvest is done by hand using 12-kg boxes. All the varieties are destemmed and go directly into the press. The must is kept at 5°C for 24 hours to make racking easier. Alcoholic fermentation is done in a stainless steel tank. No malolactic fermentation. 100% in French oak used barrels. Aging is around 8 months. Then, the wine is bottled and aged in bottles for 3 years.
TASTING NOTES
Fresh with good aromatic complexity, honeyed citrus fruit aromas. Abundance of ripe fruit, pears, and quince type with a bitterish minerality and good acidity, floral hints, and fresh herbs in a long smooth finish.

WINE MAKING NOTES
Harvest is done by hand using 12-kg boxes. The grapes are destemmed and slightly crushed. Fermentation is done at 28°C-30°C plunging the cap a couple of times a day for 15 days approximately. In the next 20 days, a battonage is done stirring the skins and lees until they are crushed. 18 months in 225-liter French oak barrels (90% used), then the wine is bottled and kept in the cellar for 5 years before putting it on the market.
TASTING NOTES
Ripe, jammy fruit, mature dark fruit aromas, plums and cedar, Mediterranean herbs with chocolate notes and spices. Pleasantly creamy palate, rich and succulent which should develop very nicely.

Harvest is done by hand using 12-kg boxes. The whole grapes are put into a wooden vat. In fermentation temperature goes up to 28°C plunging the cap every day. Total fermentation time, from the moment the grapes are put into the wooden vat until they are crushed, 25 days. 14 months in 225-liter French oak used barrels. Then, the wine is bottled and kept in the cellar for 3 years before putting it on the market.
TASTING NOTES
Very expressive and enticingly deep, aromas of ripe strawberries and redcurrants, menthol, clove and cardamom. A fruit-forward character with a dark, mineral side, resulting in a nice interplay. On the palate earthy notes, menthol, watery hints, and touches of liquor-infused black fruit and spices. Ripe tannins, tense acidity and a long, slightly bitter finish.
